Summer Salad With Taboule & Israeli Cous Cous

My sister in law asked me to bring a pasta salad to a recent family gathering and I did not feel like making my ordinary, go to pasta salad. Instead, inspired by this and this I made this:


I was in such a hurry that I did not snap a picture of the final product, which had more tomatoes, cucumbers, parsley, and balsamic vinegar, making it a little "prettier."

Overall the salad was light, refreshing, and perfect for summer.

Steps:

I prepared one box each of Near East Israeli couscous {also called pearl couscous} and taboule. I used the seasoning packets included but in the future I might not because the flavors were strong and I didn't LOVE them. I ultimately combined them into a bowl and put in the fridge.

I then added diced red onions, yellow and red cherry tomatoes, cucumbers, and parsley and added them to the cooled pasta. I then added balsamic salad dressing. Easy,and not your average pasta salad. Kind of nice to have in my repertoire for all of the BBQs and get togethers that will be attended this summer.
