After nearly seven years of being in a relationship and 3.5 of living together under the same roof, S and I are really starting to get into some good routines. One of the routines we got into last fall and have since stuck with is preparing a large pot of soup {or something similar} on Sunday afternoon and enjoying it all week for school/work lunches. This saves SO much time {and money because it is inevitable that if something is not prepared ahead of time, we will run out of time getting ready in the morning and resort to buying lunch}. It is also a very healthy option. BUT S is a very hungry man and eats a lot. The key to making sure he is satisfied with soups for lunch is making sure they are HEARTY {read filling} and dynamic {read have enough ingredients to be tasty and not boring}. Consequently, I have mastered MANY different soup recipes and I am constantly searching for new ones to try. This week I made a hearty vegetable soup:

Note --the recipe called for escarole {which I substituted for cabbage} and butternut squash {which I substituted for zucchini}. It is DELICIOUS and we will definitely be making it again.
